Dark Chocolate Peppermint Bark Recipe

Dark Chocolate Peppermint Bark 


10 ounces very good quality semisweet chocolate, finely chopped
8 ounces very good quality bittersweet chocolate, finely chopped
1 cup pistachios, roasted cashews, etc.
1/2 cup dried cranberries
1/2 cup pumpkin or sunflower seeds
2 drops Peppermint Vitality Essential Oil (or to taste) start small and add a little at a time tasting as you go.

Melt both chocolates in a double boiler on stove top. Then add peppermint essential oil and mix well. Meanwhile, line a sheet pan with a silpat mat or parchment paper. Hint: If using parchment paper you can use a straight edge ruler and a pencil to draw a 10 x 10 inch square on the paper. Then turn the paper face-down onto the baking sheet.
Pour the melted chocolate onto the lined pan and spread to form into a 10 x 10 inch square approx.
Sprinkle the cashews, apricots and cranberries over the chocolate and set aside for 2 hours or until firm.
Break the bark into chunks or cut in small rectangles and serve at room temperature. Makes approximately 24 pieces if cut in 1x3 chunks. Amount varies depending on size you choose.
